I am going to be starting my Square Foot Garden soon. Can't wait to eat fresh vegi's that I have grown myself and that I know were they came from.
I am sharing the work (and the bounty) with a friend. We plan what we are going to plant, split the cost of seeds and plants and we split the work.
It makes it much more fun to work with someone and plus gives us an excuse to spend time together! 

If you don't have the space or time or knowledge. Or you just don't want to do all the work of a garden, try hooking up with a friend and sharing the responsibilities.. That's what works for me!

Meal Plan Monday

Good Morning! And welcome to the last week of March! Hope that you are having better spring-like weather where you are! We have had LOTS AND LOTS of rain. Of course it is good to have, but I am ready for a bit of sunshine!!!

On to the good stuff, FOOD- and what we are eating for dinners at our house this week!
My darling hubby has been watching a lot of Rachael Ray lately so we are trying out a few new recipes this week:

MONDAY:                  Spicy Sausage, Chicken and Bean Pot (recipe here)

TUESDAY:                  Fend for yourself (see why we do this HERE!)

WEDNESDAY:           Tacos w/ rice, and cheese, served with Tomato-Lime Salsa.

THURSDAY:               Fend for yourself

FRIDAY:                     Date night/pizza

SATURDAY:               Hot chicken wings and thighs w/ potato logs

SUNDAY:                   Soup and sandwiches.

Super Savings Saturday

Today was a GREAT day for sales at Fred Meyer. I spent $21.92 and got 4 pizzas for date night next week, 2 boxes of fish  for a quick dinner some night (they were $5/2 and I had a $1 off coupon- that made them $2 a box! Usually Van de Camp's are around $6.)

The Tillamook cheese was $10/10 so I have made a few trips to the store this week to restock my freezer. This is a great price on shredded cheese.

Also, the kelbsa sausage was $6/2 and I only got one. But I had a $2 of a $2 or more purchase in the meat dept - a Fred Meyer Reward coupon- making my sausage $1!

The Twizzlers were $5/3 and that was my little indulgence this week. All in all pretty good? How did you do?

Works For Me Wednesday

Today's tip is one for those who have teenagers. Having worked in the medical field for a number of years, and having teenagers myself, it can be frustrating when your child is "old enough" to make their own appointments or to get their own test results and you, as the parent are kept out of the loop.

Talk to your child. If you have a good relationship with them it should be no problem for them to verbally or in writing tell the doctors office that it is ok for mom/dad to have access to the child's medical information.

When you have access you can set appointments, pick up prescriptions, and get test results for your child with out having to wait.

Meal Plan Monday

Good Morning!

Happy Monday, it’s the first official day of Spring Break here in Oregon. Kids are excited for a week off school and I am excited for a few days off work at the end of the week. Also, hubby and I are celebrating our 22nd Wedding anniversary this Friday!

This week for meals we are having:

Monday:           Spaghetti and Meatballs- simmered all day in sauce in the Crockpot!

Tuesday:           Fend for yourself

Wednesday:     Fish and fries

Thursday:         Fend for yourself

Friday:              22 years!!! Date night WE ARE GOING OUT!!!

Saturday:          soup and sandwiches

Sunday:            Chicken stir-fry w/ rice

Fend for yourselves nights defined

I have gotten several requests asking me to explain further about FEND FOR YOURSELF nights that we do here in our house. So let me clarify...

Fend for yourself nights started about 4 years ago. I work 2 jobs, have 3 kids and a disabled hubby. My hubby was trying to help by cooking for me. This was/is a great help but it was getting to be to much for him. My kids, (at the time were about 17, 13 and 8.), didn't know too much about cooking. - Well the oldest did, but we wanted an opportunity for all the boys to be more comfortable in the kitchen. We believe as parents, that even though we only had boys, cooking is a good skill to have.
Thus, FEND FOR YOURSELF nights were born.

We decided that 1-2 nights per week, the boys could literally "fend for themselves."  Whether this meant leftovers for dinner or something a bit more.. it was up to them. Each boy was different. One would eat nothing but cup of noodles for these nights for a long time, another ate cereal, leftovers and whatever else he could scrounge up. My oldest really got into cooking and started finding recipes and cooking some decent meals. (He is now working his way thru college as the manager of the grill on campus!)

Over the years, we have kept this up. The boys have gotten more savvy about what they want on these nights. Sometimes it is frozen potpies, lots of times they just eat leftovers like dad and I do. This has been extremely helpful as the older two have moved out and it has become harder to adjust from cooking for 5 to cooking for for 3. Fend for yourself nights have become a great way to use up leftovers and like my sister said, "Sure cuts down on the planning, shopping and cooking!"

All 3 of my boys now can really put together a meal that is tasty, fairly nutritious, and pleasing to the eye. I hope that this skill will last them a lifetime, and be something that helps them when they are out on there own and in marriage.

Super Savings Saturday- posting late :)

My Shopping yesterday was a SUCCESS! I am posting late because I had to work yesterday and I was too tired last night to post.. but here it is in all it's glory!

I wen to Winco, spent $110.25 paid out of pocket (oop) $69.49. !!! Yeah! The cashier even called me the coupon queen. I would't go that far.. but I had fun.

Last Sunday's paper had all sorts of great coupons in it and I took advantage. (I get 2 papers delivered to me each week so I get double the coupons)

There was coupons in the Safeway ad for $3 off Conagra products when you buy 10. I had 2 of those so I got 15 cans of Chef Boyrdee Ravioli and 5 cans of Manwich. - ravioli came to $.58 a can and the Manwich to $.68 each.

Ragu had a coupon for buy 2 and get pasta for free, and Winco had the Ragu on sale for $.98!

Frank's Hot Sauce had FREE product coupons! Can you say Buffalo Wings??? Yummy!

And the Maruchan Yakisoba Japanes noodles were $.74 with a $.50off coupon. Great after school snack for my hollow legged teenage boy!! :)

String cheese was also on sale for $2.58 and I had $1 off coupons so I stocked up on that.
All in all, I feel I did a great job. How did you do?

Works for Me Wednesday

I found that when I was cutting up ingredients for one of my Crockpot meals, that if the chicken is half thawed then it is super easy to cut.

In other words, if you are using frozen chicken, start to thaw it, takes about 1-2 hours depending on how thick the meat is to still have ice crystals but not thawed all the way. this makes the chicken still firm and easy to cut without being slippery sliding all over the place!

Menu Plan Monday

Wednesday:     Sweet and Sour Meatballs served over rice (meatball simmered all day in                                  the Crockpot with sweet/sour sauce!)

Friday:              DATE NIGHT/PIZZA!

Saturday:          Southwest chicken: (Chicken chunks, salsa, corn, kidney beans, red beans-                    simmering all day in Crockpot, served with tortilla chips.)

Sunday:            Soup and Sandwiches.

Super Savings Saturday!


Today I walked out of Fred Meyer paying $0.00 oop. for a Magnovox DVD player, Garnier Frutis hair product, a Lean Cusine frozen meal and a cup of Yoplait yogurt!

How you ask? Well I had coupons for free items for the Lean Cusine and the Yoplait yogurt, and a $1 off coupon for the Garnier Frutis. The DVD player was on a great sale ($34) and I had a gift card for $45.00 that I had got at Christmas for buying some jeans. I still have $6.36 left on the gift card!

At Winco, I managed to get A1steak sauce for $2.48 each, after $1 off coupon, and the Tony's Pizza pockets were $.98. ( a treat for my 13yo son). I got the frozen meatballs to try in a meal this coming week. I don't really have time to make meatballs from scratch, so I thought I would try these.

I also got a really good deal earlier this week on freeze dried strawberry slices. Figured I could use these to make smoothies out of? Any suggestions?

Crock Pot Cooking

Monday, in my Menu Post, I talked about Crockpot Cooking. One of the reasons I love Crockpot cooking is that it is so easy. It is one pot, several ingredients, mix it and let it go. You can even mix the ingredients up the night before, stick them in the pot, place in frig and first thing in the morning put your crock pot out to cook all day.
It really is a fix it and forget it meal… very easy to make.

It’s also very easy clean up. There are products out there for lining your Crockpot. You just put the plastic bag in first, add your ingredients and away you go. When the meal is over, just lift out the liner, rinse the crock pot out and clean up is a snap!
This is my easy way to cook!

Friday-             DATE NIGHT/PIZZA!

Saturday-         Cheesy Crockpot Chicken (chicken breasts, cream of chicken soup,                             cheddar cheese soup, broccoli cheese soup – served over noodles)

Sunday-           soup and sandwiches.

BUT I have a good excuse! I had to work most of the day yesterday, then I went shopping, and then came home to a wonderful dinner.
Watched a few minutes of tv with my darling hubby and then went out with my girls! Had a great time and didn't get home till VERY LATE..
so.. there you have it.. my good excuse!

Not too much to say about yesterday's shopping trip. Ragu was on sale for $.98 each.. so I grabbed 6. Yummy for making spagetti and lasagna!

It's been a LONG week. For those of you who don't know, I work 2 jobs; have 3 kids, a disabled hubby, doing working in my church and this blog. Of course, one could argue that my kids are mostly grown and don't need much momma time, but even at 21, 18, and 13, some attention is required. And believe it or not... Darling Hubby needs attention too.

So how do I fit it all in you ask?
That's right, I make lists.
I have lists of Big Projects that I need to get done during the year. (Doesn't matter when... just some time in 2011) This Year long list includes things like updating my 72 hour kits, defrosting the freezers and raking leaves in the fall. All are big projects, but all only need to be done once or maybe twice a year.
This list goes in my planner, right in front of the current month.

Then I make lists of things that need to be done every month. Sending out birthday cards to my nieces and nephews, visiting my assigned ladies from church, balancing my checkbook to name a few.

Next is my Daily list (I don't have a weekly list... most week's are the same)
I take my calendar and list my week's schedule. This includes my Daily Chore Chart, appointments for the week and any small or large projects I wish to accomplish (or work on!).

There are some things on my schedule that I try to NEVER  cancel. My #1 top priority is DATE NITE on Friday nights with my Darling hubby. #2 is Scouts/YM on Thursday eves for my 13 year old and #3 is Family time on Sunday afternoons. Since my older two boys have moved out I try to at least call them and check in on them, or visit when they show up with laundry!

I do promote flexibility, otherwise it will all fall apart. But I also let everyone know, if it’s important to you, make sure mom knows and it gets put on the calendar!
