Freezer cooking day

A few days ago my mom and I got together to do some freezer meal cooking.

Lots of cheese, chicken and vegies!
We planned our menu, bought the ingrediants and had fun! Here's what it looked like:
we boiled chicken for stock and to shred and to cube.
25 lbs of hamburger..
First thing we did was start browning the hamburger and boiling chicken. When that was done we started with our first recipe:







SOUTH WEST CHICKEN/CROCKPOT
3 chicken breasts cubed
16 oz salsa
1 16 can of tomato sauce
1 pkg of taco seasoning mix
2 cans corn
1 can black beans
1 can kidney beans
1 8 oz bag of shredded cheese.
Mix all ingredients except cheese, place in large freezer bags, freeze. When ready to use, pull out of freezer night before, and dump alll ingredients in crockpot, except cheese. Stir cook on low for 6-8 hours- serve with cheese and tortilla chips. Serve in bowls w/ cheese and chips on the side.

Next we made:

SOUTH OF THE BORDER CHICKEN BAKE
2 can cr of mushroom soup
2 cans cr of chicken soup
3 ½ cups milk
4 cups cooked chicken – shredded
2 onions finely chopped
2 cups salsa
4 cups cheddar cheese- grated
24 corn tortillas each cut into 8 pieces
In large bowl, combine soups and milk, stir well. Add chicken, onion, salsa and 3 cups of grated cheese. Layer tortilla pieces first, top with chicken mixture into 3 lightly buttered 8x8 baking pans. Top with remaining cheese. Cover w/ foil and freeze.
To serve: thaw bake at 350 for 35-45 min or until bubbly.

COWBOY CASSOROLE
½ onion chopped
1.5 lbs gr beef
4 med potatoes/sliced
Garlic – to taste
1 can kidney beans
2 cans tomato soup
1 can corn
Mix everything except potatoes, place in freezer bag, and add potatoes when dumping into crockpot. Cover, cook on low 5-6 hours

Meaty Macoroni Bake
MEATY MACORONI BAKE
1.5 lbs hamburger
1/4 cup chopped onion
1 jar/can spaghetti sauce
1 cans mushrooms
12 oz macaroni (or other pasta)
1 cup sour cream
Shredded cheese
Cook hamburger till brown and crumbly. Drain, add onion and cook for 2 min. stir spaghetti sauce and mushrooms into skillet, simmer 5 min. cook pasta and drain. Layer the pasta, sauce, sour cream and cheese. Cover w/ foil. Bake for 25 min at 350. This can be made ahead of time, frozen and then thawed and baked for 35-40 min.'

The rest of our meals were:
BEEFY HASHBROWN BAKE
4 cups frozen has brown potatoes (thawed)
3 tbsp vegetable oil
Salt, garlic powder and pepper
1 pound hamburger
1 package brown gravy mix
1 cup water
1 pkg frozen veggies
1 cup shredded cheddar cheese
In a shallow baking dish combined potatoes, oil and pepper, firmly press mixture across bottom and up sides of dish to form a shell. Bake, uncovered at 400 for about 15 min. meanwhile, brown beef, drain off fat. Stir in gray mix, water, garlic powder, salt and pepper. Bring to a boil. Add mixed vegetables, reduce heat to med and cook 5 min. stir in ½ cup cheese, and place in potato shell. *** at this point you can cover and freeze** (Thaw if frozen) bake uncovered at 350 for 15-20 min. sprinkle with remaining cheese and place in oven to let cheese melt.
SURPRISE CASSEROLE
½ cup macaroni
½ lb hamburger
3 tbsp onion, chopped
Salt/pepper to taste
1 can corn
1 can tomato soup
½ cup cheddar cheese grated
Cook macaroni, cook beef, and onions, salt and pepper. Arrange alternate layer of pasta, corn, and hamburger in a greased pan Pour soup over top, sprinkle with cheese and (freeze) Bake at 325 for 25 min or until heated through.


We also made a few pans of lasagne.

A grand total of 31 meals and 4 cups of chicken broth. Took us 4 hours from start to finish. Not to shabby, and I got to spend time with my mom!
