TightWad Tuesday.. Crockpot Recipes

TightWad Tuesdays
 
As promised, here are the recipes from yesterday's Crockpot Meal Plan.

SOUTH WEST CHICKEN/CROCKPOT
3 chicken breasts cubed
16 oz salsa
1 16 can of tomato sauce
1 pkg of taco seasoning mix
2 cans corn
1 can black beans
1 can kidney beans
1 8 oz bag of shredded cheese.
Place all ingredients in crockpot, except cheese
Stir cook on low for 6-8 hours
Serve in bowls w/ cheese and chips on the side.
 

Crockpot breakfast
1 bag 26 oz. frozen hash browns
12 eggs
1 cup milk
1 tablespoon ground mustard
1 16 oz. roll sausage
Salt and pepper
16 oz. bag shredded cheddar cheese
Spray crock pot and evenly spread hash browns at the bottom.
Crack  eggs in a large bowl.
Mix well (and slowly) using a whisk.
Add milk and plenty of salt and pepper. Set bowl aside.
Cook the sausage on high heat, drain and set aside.
Add sausage on top of hash browns.
Add the cheese and mix well.
Pour the egg mixture over everything in the crock pot. Using a spoon, spread ingredietnts evenly.
Turn the crock pot on low for 6-8 hours -- Enjoy
 
Crock Pot Ham  Great for Easter!
Cover the bottom of the crock with brown sugar.
Place ham on top of the brown sugar and add pineapple tidbits with the juice.
Sprinkle ham with more brown sugar. Cover and cook on low for 7-8 hours.
